DESIGN FEATURES
Dava’s water-themed design is contemporary and sleek with a layout resembling a lotus flower. An impressive open kitchen and large wine cellar are located at the ‘base’ of the flower looking out over the ‘petals’ that comprise the dining areas. The entire space is surrounded by shimmering water features and pools. Highlights of the interiors include striking all white marble floors, furnishings in brushed mink tones, circular dining booths, indoor and outdoor seating areas, and crisp all white table settings using designer porcelain tableware, silver and glass.
Three exquisitely appointed private dining rooms, two with floor to ceiling glass windows, are available for more intimate or exclusive affairs.
The seductive Martini Club adjacent to Dava serves the most decadent range of Martinis devised by one of the world’s most respected Martini men, Maestro Laval Lim-Ho, who has mixed cocktails during his 30-year career for celebrities, legends and royalty. These include Prince Rainer and Princess Grace Kelly of Monaco, Liza Minelli, Shirley Maclean, Clint Eastwood, Barry White and most aptly, producer of the James Bond films and Martini aficionado himself, Albert Brocoli. The striking design includes a bar made from recycled glass by renowned artist Seiki Torige, and under-lit by illuminated fibre-optic cables. It is the perfect spot for a pre-dinner aperitif, sunset cocktail or a post-dinner cognac.
MENU
Johnathan Nash’s cooking style is characterized by classic technique and the freshest ingredients, sourced locally wherever possible, to create a modern Western menu that is simple, light and full of flavor. The nightly Degustation tasting menu, allowing diners to sample six different dishes with or without wine pairing, changes at least every week to reflect the availability of the highest quality ingredients
Rock Bar Fact Sheet
OVERVIEW & LOCATION
360-degrees of sheer glamour, on the rocks.
Located on natural rocks 14 meters above the Indian Ocean at the base of AYANA’s towering cliffs, this innovative open-top bar is Bali’s most glam sunset destination. Soak up the chic ambience and superstar views as the rhythm of the ocean merges with the funky tunes vibing from the DJ booth carved into the cliff-face.
The location is not the only thing ‘on the rocks’. Signature cocktails are served in a chic glass suspended over natural rocks, within an ingenious fish-bowl base. A delectable selection of tapas is also served ‘on the rocks’, on natural stone plates. Even your bill is presented ‘on the rocks’, as waves break below and stars glitter above, with only the sea between you and the horizon. You couldn’t get any closer to the sunset without setting sail.

SUSTAINABILITY AT AYANA
OVERVIEW
AYANA Resort and Spa Bali takes its commitment to Social Responsibility, Environmental Conservation and Sustainability very seriously. We lead and contribute to a number of social, cultural and environmental initiatives in the local community, specifically in the nearby Jimbaran area. Our focus is on building communities and ‘education through leadership’ to provide genuine, sustainable development over the long-term. These initiatives include:
ENVIRONMENTAL PRESERVATION
- Waste water recycling program: We have operated a waste water recycling system since 1996, which treats all ‘black’ and ‘grey’ waste water for use on our gardens. We also produce an organic fertilizer from this sewerage treatment plant.
- Composting program: We have an effective waste management system which recycles organic plant waste for use as fertilizer for our gardens.
- Pig farming partnership: We have partnered with local pig farmers in the Jimbaran area to collect our food waste twice a day, for use as pig feed.
- Water efficiency: 95% of all linen (only excluding colored pool towels) is laundered by TexCare Laundry, which runs the 1st tunnel washing system in Indonesia, saving 10 liters of Bali’s limited fresh water supplies for every kilogram of linen laundered. AYANA also has installed dual flushing systems on all toilets, and tap regulators on all taps.
- Energy efficiency: Use of energy-saver fluorescent light bulbs throughout the hotel; energy-saver bulbs in guest wardrobes; and motion sensor lights in public toilets to automatically switch off lights in unoccupied toilets.
- Use of eco-friendly laundry and cleaning detergents.
- Tree planting program: To help offset carbon emissions, we have a tree plantation program. Most recently, we planted 5000 trees around the main entrance to the lobby, Champa Garden, and the public and employee parking areas. In cooperation with the Mangrove Information Center and the JICA (Japan International Cooperation Agency), we also planted 500 mangrove trees around Kubu Beach to prevent abrasion, landslide and flooding.
- Environmental awareness campaign in guest rooms: eg to discourage daily washing of towels and bed sheets, to reduce the use of fresh water and detergents in laundry services.
- Clean Up Program: Employees regularly participate in Clean Up Days in the surrounding Jimbaran area, to collect and dispose properly of litter.
CULTURAL PRESERVATION
- We provide free cultural programs for our guests, enabling them to experience Balinese Hindu ceremonies, visit nearby temples, meet with the local community leaders and learn about Balinese rituals and traditions. We also employ traditional dancers and musicians from the local community to provide free daily cultural performances. We believe this program is essential to encouraging the preservation of this unique culture, which is not practiced anywhere else in the world.
- We participate in the local government Tri Hita Karana program (based on the Balinese belief that universal balance is achieved when man, god and nature live in harmony together). This involves helping to preserve and clean public areas of Besakih Temple, Bali’s sacred ‘mother’ temple.
EDUCATION PROGRAMS (BOTH YOUTH AND ADULT)
Programs to improve the level of education in the population living near the property:
- Community Outreach program by Departmental Trainers which aims to educate children at two elementary schools in Jimbaran, which suffer from lack of government funding. The program consists of teach-in sessions focused on developing positive habits to protect and conserve the environment. Additionally we have donated books and maps for the school libraries.
- We support the Sanatana Dharma Orphanage in North Bali with employee donations to fund the education of 35 disadvantaged children aged 4-17.
- We also take part in the Bali Hotels Association Scholarship and Mentoring Program for students of the Bali Hotel and Tourism Institute.
HEALTH INITIATIVES
Initiatives to improve health in the population living near the property:
- We have installed basic services (ie water, electricity, roads, public health, and infrastructure) for the local community.
AWARDS
2006-2008
The resort has been awarded the Gold prize of the Tri Hita Karana Awards for three consecutive years (2006, 2007, 2008). This prestigious award is given by the Bali government to the most outstanding resort that demonstrates commitment in protecting and conserving the environment.
2010
